Cherry Tequila Sour

A quick batch of cherry syrup makes for a lovely tequila sour (not to mention, quick sodas and fancy iced tea and lemonade). Pour the cherry syrup into this tequila sour in the final step. It's syrupy weight will drop the cherry syrup to the bottom of the drink and create a beautiful gradient that tastes and feels like the best of summer. Cheers to a delicious week! 

Cherry Tequila Sour
serves one
2 ounces tequila blanca
1/2 ounce lime juice
1 ounce pineapple juice
1 lemon peel twist
1/2 ounce cherry syrup
cherry, for garnish

Add a large ice sphere or cube to a rocks glass or similarly sized drinking glass (these are thrifted, 8-ounces in size). Fill a cocktail shaker half full with ice. Add tequila, lime juice, and pineapple juice to the shaker, then shake vigorously for at least a minute.  Strain into the serving glass. Twist the lemon peel over the top of the drink to express the lemon oils onto the surface of the drink, then rub the rim of the glass with the peel. Place the peel into the side of the drink as a garnish. Pour the cherry syrup over the top of the drink. It's viscous and thicker than the rest of the cocktail and will float to the bottom, creating a lovely gradient. Serve as is with a fresh cherry garnish or, if desired, use a bar spoon to mix the drink together (pictured below). 

Cherry Syrup
makes 1 cup syrup
2 cups cherries (any sweet variety such as bing, whole but stems removed
1/4 cup cane sugar
1/4 teaspoon salt
1/4 cup water
1 lemon peel twist

Add cherries, cane sugar, salt, water and lemon peel to a small saucepan over medium-high heat. Bring to a boil, stirring as it heats to dissolve the sugar. Once the syrup reaches a boil, reduce the heat to low to maintain a gentle simmer. Let simmer for 15 minutes, remove from heat and let cool. Strain through a fine mesh sieve, using a rubber spatula to push the syrup through, and store in a sealable airtight jar. Keep refrigerated and use within 1 week.
